Ingredients:
- 2 cups of flour
- 3 tsp of baking powder
- 1 tsp of salt
- 2-3 tsp of brown sugar
- 2 tablespoons of unsalted butter (softened)
- 2 cups of cold water
- 2 cups of extra virgin olive oil
Directions:
- Add flour, baking powder, salt and sugar (I use brown sugar), to a mixing bowl. Whisk together.
- Add in softened butter gradually, while pressing between fingers.
- Add in cold water gradually to form dough. (Note you may not need the entire 2 cups, just be mindful of dough consistency- if the dough is sticking to your fingers, sprinkle some additional flour to balance the consistency). Knead dough accordingly until the mixing bowl is clean.
- Cover the mixing bowl with cling wrap and refrigerate for at least 15 minutes.
- Now begin taking pieces of the dough and roll into small balls. (Remember, while cooking, the dough will expand, so the smaller the better).
- Heat 2 cups of oil in a pan (I used a Dutch pot) Once heated, begin dropping the dough balls into the pan. The Johnny cakes will begin to float to the top once the first side is cooked.
- Cook for about 2 minutes on each side. Turn Johnny cakes accordingly to evenly cook.
- Serve with corned beef and enjoy!
