Ingredients
- 4 green bananas
- 1 cup of rolled oats
- 1 ½ cans of evaporated milk
- 1 ½ cans of almond milk
- 1 can of condensed milk
- ½ tsp of salt
- 1 tsp of grated nutmeg
- 1 tsp of all-spice
- 1 tsp of cinnamon powder
- 2 tsp of vanilla extract
- 2 cinnamon sticks
- 3 cinnamon leave
- 3 cups of water
Directions
1. Preparing Green Bananas - Cut the ends off of each banana. (Note green bananas stain! So protect your fingers by wearing gloves or greasing hands with olive oil or Vaseline.
2. Take each banana and insert knife along the raised edges. Be sure the incisions cut deep enough near the banana
3. Peel off banana skin and discard. Prepare a bowl of cold water with a squeeze of lemon/lime. Drop the peeled bananas into the water, which minimizes oxidation
4. Cut each banana into round slices
5. Cooking Process - Add banana pieces to blender. Pour in oats, Evaporated milk and almond milk. Blend until smooth
6. Bring 3 cups of water to a boil. Add in cinnamon sticks and cinnamon leaves. Let boil until water is infused with sticks. Remove sticks and set aside
7. Pour in green banana and oats mixture and stir slowly for 1 minute. Reduce heat at this point
8. Add in vanilla extract, grated nutmeg, salt, all-spice, cinnamon powder and condensed milk. Mix in well. Cover pot and let cook for 15-20mins. Stir occasionally
9. Remove porridge from heat and continue stirring to prevent lumps
10. Serve while hot and enjoy!
