Grapes from Chile Chicken Skewers

Makes 10-12 skewers

Ingredients:

Skewers:

  • 3 cloves garlic, minced
  • ¼ cup Olive oil
  • Zest and juice of one lemon
  • 2 teaspoons dry Italian herb blend
  • 1 teaspoon Diamond kosher salt
  • A few big grinds of black pepper
  • 2 bunches, firm red and/or green Chilean grapes
  • 1/2-pound organic chicken breast – no skin – cut into ¾ inch cubes
  • 1 package organic firm tofu – blotted between two paper towels to dry then cut into 3/4-inch cubes
  • 10-12 ten-inch wood skewers
  • 3 lemons cut into wedges – for serving
  • sea salt flakes + freshly ground black pepper

Tzatziki dipping sauce:

  • 1 1/2 cups Greek yogurt
  • ½ small cucumber, peeled, and sliced into thin half moons
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Salt to taste

Directions:

  1. In a large mixing bowl, mix marinade ingredients: garlic, olive oil, lemon zest and juice, Italian herbs, salt and pepper. Whisk ingredients together. Place grapes, chicken, and tofu in the marinade and let them soak up all the goodness for at least 1 hour and up to 3 hours.
  2. (Before prepping skewers with grapes and chicken, place wooden skewers in a water bath to soak – this will help them not to catch on fire.)
  3. In a medium bowl, mix together all tzatziki ingredients. Set aside while grilling the skewers.
  4. Alternate chicken/tofu on the skewers with grapes. Grill – 3-4 minutes per side until chicken is cooked through.
  5. Season skewers with an additional grind of black pepper + generous squeezes of lemon juice. Serve right away with tzatziki for dipping.
