Coconut Key Lime Mojitos

Coconut Mojitos are the perfect tropical summer crowd-pleaser. Coconut Mojitos are everything you’re looking for in a beachy drink. They’re fruity, sweet, and creamy; but not as heavy as a piña colada or many other tropical drinks. They’re balanced and easy to sip thanks to the addition of lime and refreshing mint.
Ingredients (makes 1):
- A couple small bunches of mint (about 6-12 leaves depending on your preference - save some for garnish)
- 4-5 mini key limes (This recipe also works with regular limes if you just use about 2 limes instead)
- White Rum
- 1 can of cream of coconut (We like CocoLopez)
- Crushed Ice
Muddle in a chilled glass:
- A large handful of mint
- About 4 key limes quartered
Shake in a cocktail shaker:
- 2 oz white rum
- 3/4 oz cream of coconut
- Ice
Strain the coconut and rum mixture into the glass with the muddled limes and mint. Stir thoroughly and add lots of crushed ice to the glass. Garnish with a small bunch of fresh mint and a lime wedge.
*For a lighter drink top with a little bit of lime club soda
